EasyCheck is the latest innovation for the determination of tartaric and calcic stability in wine.

Tartaric stabilization is related to precipitation phenomena caused by potassium and tartaric acid present in wine. These two substances are naturally present in the grapes but without chemically coming into contact; when the grapes are pressed, on the other hand, the two substances mix and can create problems of precipitation of potassium bitartrate. This precipitation is a slow process that can occur in the winery after fermentation of the must or directly in the bottle, after the wine has been bottled, once the wine reaches the wine shop shelves. This phenomenon does not cause any organoleptic damage in wine but certainly, visually, the product is not considered of a good quality and is not accepted by an increasingly demanding consumer and market.

    Steroglass Research & Development, relying on the fact that to assess the solubility of a salt in a liquid, heating is extremely faster and more linear than cooling, has developed an innovative method that allows the Easycheck analyzer to exploit the properties of saturation temperature, thus limiting the inhibiting action of factors that counteract calcium tartrate precipitation and allowing very short analysis times, on the order of two hours.
    The evaluation of calcium stability will then be analyzed as a function of wine Saturation Temperature. Comparative tests carried out on numerous samples, also together with certified laboratories, show total conformity between the result of the main precipitation tests and the innovative EasyCheck method.

Technical features

The working principle of Easy Check is to promote the precipitation of potassium tartrate by adding excess THK. Stability measurement is then derived from determining the electrical conductivity of wine under different temperature conditions.
