Fumaric Acid (FA) is a key component of the Krebs cycle and plays a fundamental role in ATP production. In the winemaking industry, the addition of fumaric acid is a practice regulated by the OIV, as it effectively inhibits malolactic fermentation (MLF), preserving the organoleptic characteristics of the wine. However, its analytical monitoring has so far been complex and costly, requiring labor-intensive techniques such as HPLC or non-automatable enzymatic methods.

The R&D team at Steroglass has developed an innovative solution for the determination of Fumaric Acid: the STARTER KIT FUMARIC ACID, compatible with all analyzers in the HYPERLAB family.

## Technical features

- This kit, combined with the **L-MALIC ACID AUTOMATION KIT**, enables a fast and cost-effective analysis, providing highly accurate data up to **0.6 g/L (60 g/hL)**—the maximum value recommended by the OIV for MLF inhibition (**OIV-OENO Resolution 581A-2021**).
- Thanks to its high precision and reliability, all **Hyperlab analyzers (PLUS, BASIC, SMART)** allow real-time monitoring of fumaric acid concentrations up to the bottling stage, ensuring optimal control of the winemaking process.
- The **STARTER FUMARIC ACID** kit also includes fumaric acid standards at **0.3 g/L and 0.6 g/L**, allowing the **Hyperlab** method to be calibrated with extreme accuracy. The correlation between data obtained using **Hyperlab analyzers** and **HPLC analysis** of various wine samples—both untreated and supplemented with fumaric acid—has proven to be excellent.
